- combine dry ingredients in separate bowl : flour, cocoa powder, baking powder, baking soda, and salt. Best to sift as or before adding to batter.
- combine wet ingredients in large mixing bowl : sugar, oil, eggs (beaten lightly first), vanilla extract. mix.
- add sour cream to wet mixture. beat well all wet ingredients.
- added sifted flour mixture and water one third of each at a time. alternate dry and water until all incorporated.
- scape sides of bowl and ensure bottom of mixture is all mixed in together.
- pour completed batter into a greased pan - 9x13 or two 8-9 inch rounds or 24 cupcakes
- bake at 350° for 25-28 minutes. check that inserted toothpick come out clean and cake bounces back with you press with finger. cake will smell with rich dark chocolate.
- remove from oven and allow to cool completely.
- add your favorite frosting and enjoy!½

Here is a wonderful frosting recipe.
Combine all of the following with a hand or stand mixer. Measurements are relative estimates, I always make frosting with portions as needed during mixing. Goal is right consistency and of course taste.
- 1/2 cup butter (one stick)
- 3.5 cup powder sugar (keep handy, may need more!)
- 1/2 cocoa power
- 3 tbsp condensed milk
- 3 tbsp milk (gauge as needed)
