Monty’s Cake

Best chocolate cake recipe!

Ingredients
  

Wet
  • cups granulated sugar
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • ½ cup sour cream
dry
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
last wet addition
  • cup water optional to use coffee

Equipment

  • cake pan(s)
  • hand or stand mixer
  • measuring cups – dry and liquid
  • measuring spoon
  • scraping spatula

Method
 

  1. combine dry ingredients in separate bowl : flour, cocoa powder, baking powder, baking soda, and salt. Best to sift as or before adding to batter.
  2. combine wet ingredients in large mixing bowl : sugar, oil, eggs (beaten lightly first), vanilla extract. mix.
  3. add sour cream to wet mixture. beat well all wet ingredients.
  4. added sifted flour mixture and water one third of each at a time. alternate dry and water until all incorporated.
  5. scape sides of bowl and ensure bottom of mixture is all mixed in together.
  6. pour completed batter into a greased pan – 9×13 or two 8-9 inch rounds or 24 cupcakes
  7. bake at 350° for 25-28 minutes. check that inserted toothpick come out clean and cake bounces back with you press with finger. cake will smell with rich dark chocolate.
  8. remove from oven and allow to cool completely.
  9. add your favorite frosting and enjoy!½

Notes

Here is a wonderful frosting recipe.
Combine all of the following with a hand or stand mixer. Measurements are relative estimates, I always make frosting with portions as needed during mixing. Goal is right consistency and of course taste. 
  • 1/2 cup butter (one stick)
  • 3.5 cup powder sugar (keep handy, may need more!)
  • 1/2 cocoa power
  • 3 tbsp condensed milk
  • 3 tbsp milk (gauge as needed)
